Cheater Ethiopian Cottage Cheese (Ayib)
This is a complete cheat. I’m not even attempting to make real cheese, just tweak American cottage cheese to a slightly different flavor profile. But it works reasonably well on doro wat and awaze tibs or just alongside them on the injera.
Ingredients
- 3 cups small curd cottage cheese
- zest of 1 lemon
- 3 tablespoons plain Greek yogurt
- 1/4 teaspoon salt
Directions
- In a medium bowl, combine cottage cheese, lemon zest, Greek yogurt, and salt. Stir to combine.
- Adjust seasoning to taste and serve.
